BBQ Master Classes

The Paddock Butchery is hosting BBQ Master Classes once every 2 months in our dedicated meat smoker area. There's 3 classes to choose from, with each class containing a total of 10 people. This ensures you have the maximum amount of time to soak up the knowledge from our BBQ Pit Master's Chris Davey or Mick Hosbon from The Smoking Hot Bros.. 

To book your ticket, click on the Eventbrite links for each event and follow the steps. Please note these classes are non-refundable. However, we may be able to transfer your ticket to another person organised by yourself, if required.

 

 

Steak Lovers Master Class (SOLD OUT)

This hands-on class is led by BBQ Pitmaster, Chris Davey from The Smoking Hot Bros. You'll learn:
  • how to cook different cuts of steak, and how to reverse sear
  • map out where each cut is located on the carcass
  • how to successfully butcher and trim each primal
  • navigate grass verse grain fed cattle and what to expect in taste and texture, as well as best cooking methods for each
  • handle cuts like a hanger steak, oyster blade, thick flank and the almighty tomahawk steak
  • work on several styles of BBQ so you can get the most out of any situation you're faced with
  • discuss flavour enhancers. E.g. rubs and sauces to compliment your steak
  • quick and easy sides that you can use on the BBQ to make a feast of it

All Things Beef Master Class

Ever wondered how you can produce the perfect beef brisket? This is the hands-on class for you! Hosted by Pittmaster, Mick Hosbon from The Smoking Hot Bros, you'll learn:

  • fundamentals of BBQ setup and fire management
  • trimming the brisket, where to, how much, and why it's necessary
  • rubs, sauces, and glazes that are best and what results to expect
  • managing the cook, including what temps to run at various stages, does it actually take 12 hours, and is it possible to speed up the process
  • finishing stages and what to do when
  • quick sides that will make a brisket shine

For the ladies who'd like to be BBQ pros! In this hands-on class you'll learn all the BBQ Basics with BBQ Pitmaster, Chris Davey from The Smoking Hot Bros, including:

  • how to prepare beef short ribs, pull apart lamb shoulder, and smoked chicken wings
  • discuss keys to success and common pitfalls associated with Low n Slow BBQ
  • learn about different fuel sources, how they are produced and their effect on results
  • fundamentals of BBQ setup and fire management
  • ingredient selection and basic butchery
  • which rubs, sauces, and glazes are best and what results to expect
